Here are some tips and methods to help you achieve steak perfection.

  1. Start with a Great Steak
    • Begin with a high-quality cut of meat.  Look for something nice and thick with good marbling.  Rib Eye, Porterhouse, Sirloin, and T-Bone Steaks are excellent choices.
    • Season the steak at least 45 minutes before cooking.  Salt and pepper work well, but you can also add other seasoning to your liking.
  2. Bring the Steak to Room Temperature
    • Take the steak out of the refrigerator and let it come to room temperature.  Cold meat won’t cook as evenly.
    • Natural enzymes break down muscle fibers, enhancing tenderness.

    • After cooking, let the steak rest for about 5 minutes.  This allows the juices to redistribute, resulting in a more flavorful and tender steak.

Cooking Methods for a Perfect Steak

There are several ways to cook a steak.  Here are a few popular methods:

  1. Grilling (Barbecue)
    • Pre-heat the grill to medium-high heat.
    • Season the steak and place it on the grill.
    • Turn the steak as needed until it reaches your desired temperature.
    • Rest the meat before serving.
  2. Reverse sear
    • According to J. Kenji Lopez-Alt, the reverse sear method is the best.
    • Start by cooking the steak in the oven at a low temperature until it reaches about 41°C (for medium rare).
    • Finish by searing the steak in a smoking hot skillet with oit and butter.  The exterior is already dry from the oven, resulting in a better crust. 
  3. Stove to Oven:
    • Sear the steak on the stovetop in a hot pan with oil.
    • Transfer the pan to a re-heated oven to finish cooking.
    • This method works well for thicker cuts. Marinate for additional moisture and flavor into the meat.
